These soft and chewy chocolate chip cookies are vegan and made with coconut oil. This recipe is super easy and can be made gluten-free.

Ok maybe cookies aren’t a summer recipe per se… but who doesn’t love cookies any time of the year, right?? I’m obsessed with these cookies and will definitely be making more than once this summer!
