Ok, so pumpkin-spinach smoothie bowl does not sound like it would be super delicious, but you’ve got to trust me on this one – it is T-A-S-T-Y!

And the texture is so smooth and creamy. I just can’t get over how good this bowl is. I’ve become obsessed with making it for breakfast the past few weeks now.

I love that I get a couple servings of veggies in my breakfast – it really makes me feel like I’m starting the day off right (especially when you can’t even taste them!).

This smoothie bowl recipe is so easy and it’s:

  • Gluten-Free

  • Contains no added sugar

  • Super satisfying and filling

Pumpkin-Spinach Smoothie Bowl

Introducing the vegan Pumpkin-Spinach Smoothie Bowl recipe! It’s perfect for fall and packed with all the nutrients you need to build a healthy breakfast.

Prep time: 5 mins 

Total time: 7-10 mins

Serves: 1

Ingredients:

1/2 cup almond milk

1 Tbsp coconut yogurt (I use YOSO unsweetened coconut yogurt)

2-3 Tbsp pumpkin puree

1 tsp cinnamon

1/2 scoop vanilla protein powder (I use Progressive or Sunwarrior brands)

1 handful of frozen mango (sub for 1 frozen banana if you don’t have frozen mango)

1 scoop banana nice cream (optional) I used Chimptreats Banana

1 handful spinach

Toppings (optional):

Sliced banana

Fresh berries

Cocoa nibs

Hemp Heart seeds

Nut butter*

Sliced Almonds

Chia seeds

Directions:

1. Place all ingredients in a blender and blend until smooth

2. Pour into a large bowl and top with your favourite toppings!

3. Enjoy!

Notes:
